These are wonderful, easy to make, no bake granola bites. They are chewy and delicious and make a great healthy snack. These are vegan & sugar free.
Granola Bites
2 cups rolled oats 1/2 cup raw pumpkin seeds 1/2 cup dried cranberries 1/4 cup sunflower seeds 1 tsp cinnamon 1/2 cup almond butter 3/4 cup agave nectar 1/4-1/2 cup unsweetened coconut shredded
Directions: In a food processor, grind the oats until they are broken up, but not superfine. Pour them into a bowl and add the pumpkin seeds, cranberries, sunflower seeds and cinnamon. Mix well. Add the almond butter and agave and mix until everything is well combined. Form into small 2-3 bite balls and then roll in coconut. Chill 2-3 hours to firm up a bit. Can be kept for 1 week, if they last that long.
